Hunda Oli is a new coffee farmer’s cooperative located in the forests of Agaro and Limu in Oromia region, Western Ethiopia. With an altitude of 2000 metres above sea level and heirloom varieties on their doorsteps, it is not surprising that this is an excellent coffee with deeply complex nuances dominating the cup.
Until recently most of the coffee from this region was rather ordinary – naturally processed and unsorted and as such the value of the coffee was limited both financially and within the cup. With the assistance of the non profit organisation, Technoserve, the producers have now tapped into the coffee’s undoubted potential producing truly spectacular lots which has led to their income increasing.
The coffee is processed at washing stations where the cherry is pulped. It is then soaked underwater overnight before being washed again in the morning and put on to shade covered drying tables. The wet coffee is then sorted for defects and transferred to drying tables for 7-14 days depending on weather conditions.
