A sugarcane decaf from the Oromia region with chocolate biscuit and brown sugar warmth, roasted for espresso and filter.
Most decaf compromises the cup. This one doesn't. Lala Salama is sourced from the Oromia Coffee Farmers Cooperative Union, a farmer-owned organisation representing smallholder growers across Ethiopia's Oromia region, one of the country's most respected growing areas for highland Arabica.
The decaffeination uses the sugarcane ethyl acetate process. The green coffee is gently steamed, then washed with a water and EA solution that selectively removes caffeine while preserving the coffee's flavour structure. The beans are steamed again to remove any residual EA and dried back to their original moisture content. Ethyl acetate is a naturally occurring compound found in fruits and sugar cane. The process is gentle by design.
The result keeps the character of the origin intact: warm, clean and sweet, with the body you'd expect from well-grown Ethiopian Arabica. Just without the caffeine.
